Peanut Butter Cups
These are some amazing healthy peanut butter cups which are great as a dessert or occasional snack. I have a real sweet tooth so it was great to create a recipe that combines my favourite ingredients, dark chocolate and peanut butter. I hope you enjoy these as much as I do, recipe below!!
Serves 12-14
Ingredients
- 100g Walnuts
- 50g Cashew nuts
- 50g Pecan
- 50g Oats
- 10 Meedjool dates
- 2 tbsp Coconut oil
- 18-20 tsp Peanut butter
- 170g 70% Dark chocolate
1. To make the base, add the walnuts, dates, oats, cashew nuts and pecan in a food processor and blitz them until the consistency is like a crumb. Then add the coconut oil to the mixture and combine in the food processor until the base sticks together when pressed.
2. Take a muffin tray and divide the base into small balls that you can pat down into the tray. Then place a teaspoon of the peanut butter (or any nut butter of your choosing) on top of each base, then place in the fridge to chill.
3. While the base is chilling, melt the dark chocolate (put water in a pan and heat it over a medium flame, place a bowl on top of the pan and break up the chocolate into chunks, the chocolate will slowly melt). Once the chocolate is runny take it off the heat.
4. Take out the base mixture from the fridge and spoon the melted chocolate over the peanut butter and cover it. Once all the bases are covered, place them in the fridge and let it set, for a few hours or overnight.
