A lunch made for Queens! I jazzed up a normal egg open sandwich by adding avocado 🥑
Not only am I adding good fats to this classic and reducing the amount of mayo but I’m adding more plants into my diet by making a simple addition.

This is my take on a carrot and coriander soup! I added a bit of a Persian influence on it. A lot of Persian soups have lentils or beans 🫘 which gives the soups a little more texture and in terms of health benefits, you are giving your body more fib
